I made green chile carnita stew served over rice last night. Used all the cooked rice last night so I made tortilla chips to go with it tonight. The stew was really good and we didn't want to take a chance on wasting it.
Carnitas - excellent way to cook a cheap cut of meat.
I was going to have pork chops, mashed taters, green beans and garlic bread but didn’t have it in me to cook.
So a bag of Cheetos and a glass of sweet tea.

I've been working on a pot of gumbo for hours already. Only a couple more hours and dinner will be ready. I forget how many steps there are to doing gumbo right.
Make stock. Can't use bought chicken stock. Too bland.
Peel and head shrimp.
Make more stock.
Use the fat cooked out of the chicken to make roux. Roux alone takes 30 minutes.
And then you can actually make the gumbo.
But it sure smells good right now. This is chicken, andouille sausage and shrimp gumbo using the last of my homegrown okra and tomatoes from the freezer.
