    Me too; same deal - I got way too much going on right now to make ANY more new decisions. Let me get a few of the current ones knocked off the list first. FD'ing saves on space (that I don't have as much as I thought I did, despite building more) and isn't in fragile jars and will last longer. The equation makes sense, even for the bucks.
    The USAF Pilots call them "Weatherguessers"! The models they use are subject to "Extreme Sensitivity to Initial Conditions" - means that if a Butterfly in Africa sniffs it's Left Armpit, thjngs are gonna be different than if it had done the Right one!
    Today is "after action" cleanup, washing utensils, putting away the canning equipment, rearranging the storage (FIFO), inventory, planning for the circa-Holiday Proteinaceous sales, for yet another spate of Freeze-Drying.

    Meatloaf(s), Ham Steaks, Seasoned Ground Meats of various Cultural palettes, maybe (if I'm lucky) some Game Meats - are next up in a Month or Two.

    I've pretty well perfected canning ground meat, normally just a basic seasoning, but i've always wanted to know how the dryer deals with good greasy taco meat. It's probably a good two years out as a realistic investment, but they keep looking better.

    Grease is difficult for Freeze-Drying. Much at all, and the storage longevity is lost. Drain/ eliminate grease as much as possible. Pick lean meats. Drain, absorb as much oils and fats as possible. Add the fats needed back in at serve, using whichever You have on hand.
    Ended up being 43 Quarts of AppleSauce, and total output for Two Day's Canning, plus Six Days' Freeze-Drying (running Concurrently/overlapping), over 80 Quarts of Fruit: Bananas, Peaches, Pears, and those durn Apples...We're all Three taking it easy today!

    Zero problems wrt Blacks - Best Man at My wedding was Black Buddy of many Years. Just tire of the "Check the boxes" Casting - reality would have Shows with "Mix and Match" Characters, in a RANDOM manner. Same observation applies to Gays, Asians, First Nation, Handicapped, Age Mismatches, and so on. Thing is, in Advertising as Well, on TV, it is tiresome to see the artifice.

    I have a working theory, that they believe there is some magical, alchemical formula that will automatically produce some sort of utopia, HL. But because they've already rejected the one thing that IS magical and has the best chance of nurturing harmony (live & let live)... they keep trying and keep having to put out the flames of their failures.
    Wife makes Me suffer through Romantic Hallmark Programs, one aftter another... Hallmark is Casting Blacks as Pilots, Supervisors, Bosses, Leaders of Businesses in Every Show (albeit in secondary roles to the Romance Couple). Every Show.

    Additionally, Very Often, "Sidekicks" to Romantic Couples' individuals are Black. Best Men, Best Friend, ... Because it is almost every Show, it is just so tiresome, and so fake.

    Well my wife watches Dr. Pol about 20 hours a day. A man can only take watching a man shove his arm up a cow's rectum so many times.
    I'm often in another room watching something else nowdays when I have time to sit down.

    Oh Yeah: Complete Maintenance on the Distiller - disassemble, suction the condenser fins, clean the grey fur off the Condenser fan, shine all the Stainless steel, etc.
